Embarking on a 22-day vegan cleanse in December 2013, Beyonce and her husband Jay-Z say they weren’t only out to cleanse their cupboards. The duo, who announced their intentions on Jay-Z’s website Life + Times, participated in the challenge as a “spiritual and physical cleanse.”

Making the jump from greens some of the time to greens all of the time can be a daunting task, but vegan guru Marco Borges shares a recipe loved by Bey and Jay that may help even the most finicky eater dine like an A-lister.

Red Quinoa, Almond and Arugula Salad

INGREDIENTS
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp maple syrup
Sea salt and black pepper to taste
4 cups arugula, packed
1-1/2 cups cooked red quinoa, cooled
1-1/2 cups cantaloupe chunks
1/4 cup slivered almonds

DIRECTIONS
1. For dressing: Whisk together the oil, vinegar and syrup. Add sea salt and pepper, as desired.
2. Onto two serving plates divide the arugula, quinoa and cantaloupe. Sprinkle with the almonds and drizzle with the dressing.

Serves 2.
